Cooking introduces flame, hot surfaces, steam, water, food waste and unsecured equipment into a working cabin. Tasks that remain controlled alongside can become hazardous when heel, roll or an unexpected course change removes footing or shifts a pan. The galley arrangement must provide a repeatable path from storage through preparation, cooking, serving and cleaning. Each stage must limit movement, heat release, water use and the number of unsecured items.

Full-time use exposes faults that occasional cooking may not reveal. Burner output, regulator condition, refrigerator duty cycle, locker ventilation, drainage and work-surface restraint affect daily operation. Passage cooking adds watchkeeping, fatigue, motion and reduced crew availability to the normal workload. Meal planning must therefore match the vessel’s galley equipment, storage capacity, power budget, cooking fuel and expected conditions. Map the galley workflow before changing equipment or purchasing cookware. Identify where food is removed from storage, washed, cut, heated, served and returned or discarded. Each transfer creates a point where food, utensils or hot liquid can be dropped. Arrange the working sequence so the cook does not repeatedly cross the cabin or pass hot cookware through crew movement routes.

The cook requires a braced working position with access to a fixed handhold. A counter edge, locker handle or appliance door is not a handhold unless it has been designed and fastened for body load. Confirm that the cook can brace against movement while using both hands for a short task. Install non-slip surfaces where cutting boards, bowls and utensils otherwise move under heel.

Keep the active work area limited to the items required for the current stage. Return knives, packaging, ingredients and cleaning materials after use. An item left on the counter becomes a moving object during a wake, tack or change in sea state. Cooking underway begins with an assessment of vessel motion, course, sail changes and expected manoeuvres. Delay tasks involving hot oil, large quantities of boiling water or unsupported knife work when the cook cannot maintain a braced position. Inform the helm before lighting the stove and before moving hot cookware. The helm must warn the galley before tacking, gybing or changing course where circumstances permit.

A gimballed stove pivots around a fore-and-aft axis to compensate for heel and rolling motion. It does not remove every effect of pitching, acceleration or impact. Release the gimbal only after confirming that the stove can move through its full arc without striking cabinetry, fuel hoses or stored equipment. Keep the stove locked when gimbal movement is not required and whenever the vessel or appliance instructions require it.

Pot restraints are separate from the gimbal and must be fitted around each pan. The gimbal keeps the cooker closer to level while the restraint prevents cookware from sliding off the burner. Adjust the restraint before the pan becomes hot. Turn pan handles inward without positioning them over another burner or where movement of the cooker can trap the handle against the enclosure.

Use the smallest pan that safely contains the meal, leaving space above liquids for vessel motion and boiling. Fit lids where the cooking process permits. Inspect the gimbal pivots, locking mechanism, pot restraints and appliance clearances before offshore use. Worn pivots can allow the cooker to shift, bind or sit out of level. A failed gimbal latch can release the cooker while it is being cleaned or while cookware is being loaded. Test the latch with the appliance cold and confirm positive engagement.

The cooker’s centre of gravity changes when a heavy pan is placed on one side. Unequal loading can make the stove rotate when the gimbal is released. Place the pan, fit the restraint and control the cooker before releasing the latch. Do not use the oven door or pan handle to stop uncontrolled movement.

Flexible fuel and electrical connections must tolerate the full gimbal arc without tension, chafe or contact with a hot surface. Dense stores such as cans, jars and bottled liquids add weight and require low, restrained stowage. Do not concentrate them in the bow, stern or one side of the vessel because unused locker volume exists there.

Use a meal-based provisioning calculation. List the ingredients for each meal, total repeated items and add a controlled passage reserve. Account for drinking water, cooking water and the water required to clean cookware. Include the fuel required by meals with long cooking times.

Provisioning must also include the equipment that permits the food to be used. Monitor cabinet temperature and daily electrical consumption. A compressor that runs longer than its established cycle may indicate warm food loading, poor ventilation, damaged seals, frost accumulation, low refrigerant charge or a developing equipment fault.

Organise the refrigerator so required items can be removed without searching. Group meal components and label containers on the visible surface. Keep air paths clear where the appliance depends on internal circulation. Do not pack products against an evaporator plate where freezing can damage them unless that location is intended for frozen storage.

Load food only after it has cooled to a safe temperature. Placing hot cookware in the refrigerator adds heat and moisture, increases compressor run time and can warm surrounding food. Divide cooked food into containers that allow cooling without retaining heat in the centre. Follow safe time limits during cooling rather than leaving food exposed for an extended period.

Use a refrigerator thermometer independent of the thermostat control. The control setting does not confirm food temperature. Handwashing water must be suitable for the purpose, and drinking water must come from a controlled source or treatment process. A clear appearance does not establish microbiological safety. Protect potable-water containers, filters and filling hoses from contact with deck fittings, seawater, fuel equipment and sanitation components.

Control wiping cloths and sponges because retained food material and moisture support bacterial growth. Use a defined cleaning and drying routine, and replace items that cannot be cleaned or dried. Do not use a cloth employed on raw food contact areas for plates, hands or general cabin cleaning.

Cooking method determines fuel use, water use and heat released into the cabin. Match the burner and pan size so heat does not pass around the cookware. Use lids to reduce heat loss and boiling time. Prepare ingredients before lighting the burner so fuel is not consumed while cutting or locating supplies.

One-pot meals reduce the number of burners, pans and washing cycles required. Sequence ingredients according to cooking time rather than adding every component at once. Retain safe cooking temperatures for meat, seafood and reheated food. Reducing fuel use does not justify incomplete cooking.

Propane or LPG is heavier than air and can collect in the bilge or other low spaces after a leak. Cylinders require storage in a vapour-tight locker that drains overboard and remains isolated from the accommodation space. Do not use the LPG locker for equipment that can obstruct its drain, damage the regulator or create an ignition source.

Open the cylinder supply only for cooking and close it after the appliance has been extinguished. The solenoid provides remote control but does not replace the cylinder valve during shutdown or absence. Confirm that the flame is extinguished after closing the supply and that controls remain in the off position.

Test suspected leaks with an approved leak-detection solution or the method specified by the equipment manufacturer. Never use a flame. A pressure-drop test can identify leakage but does not locate it. Inspect hoses, regulator connections, appliance fittings and flexible sections without disturbing sound joints unnecessarily.

A flame that lifts, burns irregularly, produces soot or repeatedly extinguishes indicates a combustion, pressure or burner fault. Stop using the appliance until the cause is identified. Check burner ignition, flame condition, appliance isolation, solenoid operation, gas-detector status, refrigerator temperature, sink drainage and locker latches. Confirm that the cooker remains secure and that pot restraints adjust without binding.

Inspect the regulator, hoses and fittings at the interval specified for the installed system and applicable requirements. Look for corrosion, hardening, abrasion, unsupported weight and contamination. Keep hose identification and replacement dates in the maintenance record. Do not install automotive or domestic components where marine-rated equipment is required.

Clean burner ports without enlarging them. Confirm that flame-failure devices continue to hold the gas valve open only when the flame is established. If a burner goes out when the control is released, diagnose the thermocouple position, connection and valve function rather than defeating the safety device.

Inspect refrigerator electrical connections, fuses, ventilation openings, compressor mounts and door seals. Clean condenser surfaces where accessible and permitted by the manual. Check drains for blockage and confirm that drain water cannot reach electrical equipment or food stores.

Prepare for loss of refrigeration, cooking fuel, pressure water and electrical power. Maintain meals that can be eaten without refrigeration and prepared with the remaining cooking method. Keep a manual water supply that does not depend on the pressure pump. Confirm that emergency food and water can be reached if a cabin-sole locker is obstructed.

Avoid single-point failures in essential galley functions. An electric can opener cannot be the only means of opening canned food. An induction cooker cannot be the only cooking method where inverter or battery failure would remove it. A complete reserve food supply cannot depend on one refrigerator or freezer.

When a failure occurs, protect remaining food before dismantling equipment. Keep refrigerator doors closed, move temperature-sensitive products only when a controlled alternative is ready and record the time of power loss. Isolate fuel and electrical sources before repair work.

Carry spares matched to the installed equipment and repair capability. Applicable items can include burner seals, pressure-cooker gaskets, refrigerator fuses, electrical terminals, hose clamps, water-pump parts, ignition components and locker latches.
